A Contrasting coloured wood sounds like a great idea. Greenheart would be great but I have no way of turning it down into Dowels. 

 

i can turn you some contrasting dowels if you want.

 

i'd stick to oak thought.

 

 

at 15% you will be fine just to give a coat of oil but it will shrink a bit once in a heated environment.

 

 

as a joiner myself i know quality when i see it mate. well done.

The oak will not be the same if oiled at 15% Never get the best out of that grain on andys bed if treated now
