As per pretty much everyone, I'd have paid the man. My customers pay me when i deliver, I pay my suppliers when they deliver, everyone's happy.

Had I put myself in the embarrassing situation you put yourself in where you'd loaded the product but hadn't the tin to pay for it (which I wouldn't) I'd probably have appologised profusely and left my driving licence and watch with the guy overnight as security and returned first thing with the cash and some beer money on top for dicking him about.

Not the same situation: The OP is a sub-contractor, not a customer. One is a business, the other a consumer.

With a customer you have an advertised rate and implied contract by action - i.e. you delivered the wood, they took delivery.

With the subby (unless there is a written contract or impartial witness) there is no record. In short, the subby can b*gger off with the wood and you don't get paid.

As you say, with a new customer you have to balance offending them / future business if you get arsey over the immediate payment (that said, it is very annoying when customers do this and it's wrong). Longer term and more trusted customers get more flexibility.

Some flexibility can be extended to subbies, but only after trust has been established. But its still a bloomin' good way to get stung, particularly in the current climate.
