Boil some pasta and steam a bit of broccoli on top. I use whole grain pasta.

 

Meanwhile fry some bacon and onions and garlic. When soft add a jar or red pesto, tin of tomatoes and a good amount of cheddar cheese. Simmer and stir till all melted and infused. 

 

Once done add a glass of red wine or a small amount of apple cider vinegar and throw all into a casserole pot and mix up. 

 

If you are a fan of garlic, bacon and cheese  you will love that.

It's bloody lovely. I sometimes chuck in some garlic stuffed green olives too. The more wine the better ?
