some heavy duty fishermens waterproofs from some ex army navy store place, bright yellow and seemed like they were half an inch thick,

Spot on for rolling round under motors in winter if you are stuck somewhere  Ventile is good for water and wind proofing but it is very expensive.

I have leant towards unlined water resistant clothing over recent years, if im out of the woods and quite high activity level then its a Buffalo Systems Special 6 jacket. If I need more rip resistance then its, Swandri Woolen Jackets. Then if I am sitting in rain shooting or something then I will use waxed jacket and leggings.

For working in I have a tweed hoodie i got at a country show quite warm but very waterproof and so much more comfortable than anything else I have tried maybe a bit hot for climbing but with just a shirt underneath is comfy most the time I tend to wear a coat until I get warm then take it off put it in the truck so its something warm to pull on when you stop

Sure it has been said, but I think it depends how much you sweat as an individual, unless I am stationary I get just as wet in waterproofs as without unless it is properly cold, at which point water is ice anyway. But I know blokes who can wear the old fashioned PVC stuff in summer and be dry with just a t-shirt underneath. The most breathable stuff I have found is the paramo/ventile stuff, buts it's bloody pricey and you have to dry it thoroughly after use or it rots. On the plus though for a sweaty bloke I find it really comfortable to wear in the rain but I still get damp.
