I would say allot would depend on the species of the tree , and the intended use of said anchor point . My only question would be that surely if there is a piece of deadwood that may be usable an an anchor point would it not be wise to go round the main stem rather than just being reliant upon the piece of deadwood ?

I think if your around the stem and it has a decent collar for your rope to sit on then no problem, but would only use it for decent,as soon as you work off it,it would be to dangerous, generally there's always a better, safer option.

How big? What species? How long dead? How strong is the attachment ?

The list of criteria is too long & a question I fear even google cannot provide the answer too. :)

The answer is yes & no !

Dismantled a completely dead birch a while back, was chunky as hell and as hard as nails!

I was unsure at the time whether I felt it was safe to trust it :/ so I stuck my primary line up the hornbeam next too it. so if in doubt don't!
