I only done some amateur   laying.....

 

But how else would you"pleach" something that big? Think normally the bit left  is cut off lvl after

He'd have to. You wouldn't be able to form a tongue long enough to bend without going most of the way through the stump. It would never go down. You'd have to select the stems you wanted to lay and start your cut immediately behind them, just as you would a single stem. That means everything on the heal side has to be cut away.

I would say so looking at the pictures. I can't speak for Dorset Hedgelayer of course. He will no doubt be able to explain it better himself.
