Any one make cordial from spring time birch sap ?  ( by way of a de rail ) [emoji846]

I keep meaning to tap my birch trees to make “maple syrup”

I also keep meaning to pull the leaves of some of my oaks to make oak leave wine.

One day!

I used to make Birch Sap wine. Following fond memories of going out into the woods with my Grandad armed with a brace and bit and a demijohn.

It's nice but I feel that most of the flavour comes from the oranges and lemons that are part of the recipe. Birch sap itself has virtually no taste in my experience, just a subtle sweetness.

I found it a bit underwhelming to be honest and don't think I'll bother mutilating a tree for the sap again in future.

Done it once and can say I've tapped a birch tree and drunk the sap, box ticked!

When making Maple Syrup Iyou have to boil it down to condense it, this will of course condense the flavour.

The sap will be clear, and will taste like water with a very slight sweetness to it.

It will take a LOT of sap to make a little bit of syrup.
