I had a go at a zabaglione with whites, realised my jury-rigged bain-marie was going to end up on the floor, put the mixture straight to the gas and ended up with a pan of fairly grim sugared egg graupel. Binned that, drank the rest of the sherry. All's well that ends well.

Beef Rendang this evening. No marks for presentation obviously, not one of my priorities, but it tasted damn fine. Plus, the meat was meltingly tender. Homegrown Chard on the side.

Half a bottle of wine and half a bag of peanuts here. Had a BLT the size of a half inch socket set for lunch.

The other night I cooked a chicken/bacon/leek/tagliatelle thing with a jam jar of carbon nara on one of lasagne white sauce. No apologies for the use of jar sauces!

The carbonara was banging. What does Italy do with all the spare egg whites?

Whole egg carbonara is a thing.
