Knife sharpener

I use and ol boy in the village to sharpen Mrs Egg's kitchen knives, drop them off first thing on a Saturday morning he drops them back off on his way to the local pub on Saturday lunch time, cost me the princely sum of one pint of Greene King IPA. work smarter chaps.:biggrin:

A diamond steel Mark. I have the DMT and it's been pretty good but my brother (a chef) got an oval one and it's definitely nicer to use. Tried a few sharpeners where you pull the knife through between two stones but the edge is poor by comparison. Whatever you get USE IT. The amount of places I go and the knives are blunt and I offer to sharpen them and perfectly good sharpener is sitting in the cupboard unused. When it comes to sharpening little and often is the way to go.

I bought some cheap ceramic knives from lidlaldi and have just got to the stage where I need to find how to sharpen them, so would welcome views on that also.

Only thing that would touch them I would have thought would be diamonds. For them I would be inclined to try a flat diamond stone but I have not sharpen ceramic knives myself.

Its a minor fiddle to set the knife blade in the clamp to use it, but it does get them very sharp & they seem to maintain their edge once sharpened.

This one was tested in Germany and was one of best sharpeners.
