Hows the cold smoking work what do you use?

 

made one, he steel tube on side is filled with sawdust and lit. then an aquarium pump uses the venturi effect to drag the smoke into the smoker. works great.

 

Use it mostly for bacon and fish.

I have been dry curing hams and bacon for a couple of years now. Its great stuff and the bacon is just like old times, no shrinkage! I have cure a goose breast last year and sliced it super thin. It ended up a bit like parma ham just a bit stronger. I might get one of these dehydrators they look good. Any advice on smoking would be good!

Dehydrators are pretty cheap, about £50

Usually I make it out of venison, sometimes mutton and rarely beef, I tend to use what ever I've got in abundance at the time so if I've knocked a deer over or one of our sheep it makes sense to use that instead of buying beef

 

Tend to make a marinade of soy, sweet chilli sauce, garlic, ginger(ground) couple of bay leaves and whole grain mustard which works pretty well

 

Cured duck breasts are pretty easy, 24 hours in salt then hang for two weeks

I love the idea of doing air dried ham, etc but think it is best cut really thin, like on a meat slicer. When I've bought lumps of parma ham I can never get it thin thin and I dont think its the same when its thicker.

 

I keep looking at meat slicers in auctions but haven't got space for one!
