i would be tempted to fit a winch and only pull with that as it will be kinder to the track motors as the travel brake would be locked

We have always pulled with our machines, some with winch & some without. The only machine we would advise against is a turntable design because of load on the centre pin. Also all our machines have braked motors but I can't speak for other manufacturers.

how do they stay parked on a hill do they rely solely on the motor not bypassing and no creepage

Its semantics, a travel brake is to stop a moving vehicle, a parking brake is for a parked vehicle

 

In a hydraulic system speed control is usually done with flow control and (in modern machines) parking is done with a hydraulically operated brake, no pressure leaves the motor locked.

braking is usually done with the relief valve and the travel brake or park brake as it could be known is controlled negative with travel pressure
