Hi

 

Yes, we ferment plums to take to the local alambique (distillery) to make Eau de Vie, its 60 percent proof we then turn this into a fruit aperitif called Pineau, by mixing 1:3 Eau de Vie with un fermented grape juice then leaving in a small fut barrel to mature for 6 or so months.

That sounds like rocket fuel pre-dilution!

I need to start a St Peter's cream stout or a bulldog Easter brew asap. Have you tried either? I've still got 20 odd bottles of the bulldog chocolate stout to get through, I hope their Easter brew is better!

 

The St Peter's stout is very nice, it was my last brew a few months ago, to start with I didn't hold out much hope for it but it's one of those that improves drastically with age, I will definitely do another.

Sadly I am off drinking at the moment due to the hay fever :(

The Woodfored's reserve is very good that was my last effort, made the mistake of moving it the same day as drinking it (friends BBQ). This time I have decided to double bright it...

So lost the gas from the secondary fermentation but gassed it up with co2...

Works well!

Yes, its fairly strong & legal to produce small quantities of Eau de Vie in France 10 litres per person via your local 'alambique' - mobile distillery that tours the area
