theres no reason for just elm or beech i supply a guy with a pizza oven & all he asks for is dry got to be dry hardwood species dosent matter as said above the pizza is in there for less than a minute!

Live oak seems the best for BBQ, brick fired ovens here in the Southwest part of Florida.

Also for smoking fish, seems the smokers love to mix in mangrove for additional flavor!.

I have only ever eaten pizza out of a home built oven once. They were burning pallet wood. If a pizza was in longer than 20 seconds it got seriously charred. I think 17 seconds was the ideal time!!!

O and the fire brigade came out due to the smoke. But thankfully they didn't switch the oven off.
