I tried smokin fish years ago but with no luck at all................i found the worst bit was that it made the paper all soggy and trying to keep it lit was a real pain..!!!

 

Tw@t! You can only smoke dried fish. Everyone knows that.:lol::lol::lol:

Makeral smokes well,bit of lemon juice,lay them on a bit of foil to stop the juices burning with the shavings,eat with new tatties & horseradish sauce,king prawns are good too.

Ive done chicken fillets,like Felixthe chopper,nice with good cheese sauce poured over them!

There's a guide on t'internet somewhere bud. I'll try and find it. Basically get a slab big enough for your fish about 1/2" to 1" thick. Think you then butter or oil it and bang it straight on the coals. Might have been alder instead of cedar now you mention it. Was just thinking of wood with a distinct aroma. I've never done it but have eaten and witnessed it done, however the claret made me take less note of the actual instructions.

tom,, have got rather alot of mackerel sitting about here,,, was out on the boat only a week ago...:-)

 

how many you want?

 

also got some apple to run through the chipper... works on cheese too,, cold smoke though
