A list of all the different categories would be handy on the Forums tab on the desktop website, would save me 2 clicks

No mate.  All your settings look exactly how they should be, cant see any reason for this.

There is a new patch available for the forum software though, perhaps that might make a difference, will install in a couple days.

Well i'm actually looking at tweaking the site design somewhat based on all the feedback over the past few months.  I also have a lot of new things coming that I need to be able to showcase.  I think I will be making the drop downs on the menu full width so I can include a lot more information nicely layed out and easy to navigate to...like below..
