I've cut right back on cured meats since I learned about the effects of Sodium Nitrate, and I drink a small amount of alcohol once in a blue moon.

As for human data, have a look aroung for information on cancer of the scrotum and testicles amongst mechanics. I know you can never remove completely any health risks but I try to reduce them as much as I can.
