Find someone with a welder and get them to weld a large nut to it, grinding head off will cause another problem.

Get some 6 point sockets so it doesn't happen again. If it's a 13mm head I would weld a bigger washer to it, something like M10 or M12 through the hole then weld a nut to that.

Probably not the easiest of bolts to get to with anything really, if you chop the head of the bolt off I doubt if there is enough room down the side of the chassis for the alternator to clear anyway. I think you need to look at the options listed and try and undo the bolt.

Thanks for all the help and pics. I'm burnt but now I've got it off! Now I need a stud extractor to get the remains out!! Or just put a new one on with just two bolts, it's the one at the bottom closest to the pulley that's broken?

That bracket with the damaged bolt is only held onto the engine with half a dozen bolts, it may be easier to take it of now and work on it on the bench. you only need to take the steering pump bolts off to see the rest of them that hold it on. If you want the bracket + bolts off the scrap engine above let me know and I will post it off for you.
