Birch tapping is probably as bad. Eggs are only unborn embryos if they are fertilised free range type. What about fish roe or caviar ? (not serious comments, eat what you want I'm not going to judge )

Can't beat Maple syrup, Chinese 5 spice and Soy sauce as a marinade for duck.

Looked at Birch Sap few years ago

Very watery so need lots of heat to maky syrup

 

But with sap costing £20+ per litre perhaps worth another look?
