I remember years ago Jamie Oliver saying that the main ingredients for a flavouring a Christmas ham were almost the same as Jamaican Jerk.  
 

I always meant to try it but haven’t u til this year.  Remembering my South London adopted Jamaican heritage.

Good work, love a bit of brisket. It was my cut of choice for a roast beef if I had more than, say, 800 people to feed. Just leave a few dozen of them simmering in the bratt pan overnight and flash them through the combi oven to colour.

 

Edit: bacon sandwich in a lay-by for me and the family today, on the road to a climbing wall in Derry. No pics, so it didn't happen.

Ain't these bamboo steamers great? Just stick them on the main pot and they save an extra ring. Steaming cooks things like broccoli better too.
