First stovetop curry of the season. Running a bit late. Also don’t have a lemon so made do with washing the pan with lemon Fairy.

Lemon Toilet Duck is more potent, for future reference. What kind of curry, other than water?

Big pan, fry meat and onion, push to edge, fry spices, quench with coconut milk. Today I put the rice and extra water in too, hence water.

Yeah nice, I like the sound of that idea. Bit like a risotto/paella curry. Or a Biryani on speed.

Aye. It’s cooled down and set into a surprisingly stiff biryani type thing. Soaked up the normal amount of water you’d cook rice in independently, a full litre of coconut milk in hot water and a bit extra. You’d think it’d be runnier.

My Thai green chicken curry was a bit runny tonight (thigh fillets and breast mix), so I just blended a bit of plain flour which is considered a huge, lumpy, congealing no-no.

Worked a treat.

Roast pork in the Dutch oven on the BBQ.

Just stuck it in there with some carrots, parsnips, garlic and potatoes. A bit of salt and pepper, some honey poured over it, sprig of rosemary and half a bottle of apple juice.

Started pouring down when nearly done so gave it an hour to finish off in the wood stove.

Probably the best cooked roast pork I ever had, absolutely gorgeous and even the missus agreed. Was only a supermarket joint out of the freezer, nothing special.

Did lamb shank in it last week, that was very nice too.

 

Not my pic but same deal, Petromax Dutch oven just sat on a few coals with some on top. Amazing how well they cook and for very little fuel.
