Smashed Potatoes are my latest discovery in the world of cooking...At 47 years old I cant believe I have not heard of them before now,recently I found them on a utube vid and they are bang on.

Boil some new potatoes for 10 mins,cut them in half first.Once boiled ,gently squash them with something like the bottom of a glass , brush on oil to tray and tops of spuds, salt and pepper and place on a baking tray at 200 for 45 mins and they are crispy roasty type of newbies...with a mushroom sauce they are amazing.

Dust 'em with the red, spicy stuff. Cayenne/chili powder.

I know. Some kind of new fangled coconut husk concoction I think they were, last minute purchase. They did the job though to be fair..

Tried that last night but with garlic, cayenne and tarragon seasoning. Lovely with white fish and salad.

A condiment breakthrough. Doing a posh fry up to put the criminals Doug occasionally posts about to shame. Wanted a bit of slaz for the spinach. Olive oil and balsamic vinegar the obvious choice. I mixed it up in an egg cup yesterday because that was the closest thing to hand but it didn’t have the space to whip the liquids together. A finished ketchup bottle means I can shake it to emulsion AND salvage the dregs of ketchup. A cracking little hack. 
 

No fuucks given about the dirty plate. I have an immune system that means I’ll outlive you tedious puritans, decadently.

Now if you do the same with tomato sauce and HP sauce residue, then you have a real winner 🏆
