Logs as bbq fuel

Anyone got experience of bbquing using wood instead of charcoal ,is it possible.

Yes fruit wood is good

been doing it for years, my advice is super dry wood, chopped pretty small, lit an hour before cooking - dense wood is best, hawthorne is my wood of choice!

With the South African "Braai" people always used dry hardwood.

 

But there now appears to be a move to charcoal.

 

My South African neighbours still burn wood for their bbq, you can tell by the smoke.

 

With our weather a big wood fire outside would be best and cook on that.

Charcoal is way better than wood as BBQ fuel .I like to chuck in a small log for the flame grilled effect

I have been using bits cut from the hedge for last few years. As said before super dry and split if not thin enough. It just takes a bit of planning to light the fire early enough so it is a bed of coals when time to cook

Was this aimed at me or the original poster?

 

I usually just use charcoal in a Webber BBQ, but occasionally use my chiminea with wood to cook on... it doesn't matter how big it is, the main concern is delivering heat to the food without tainting it (depending on fuel could be anything from horrible tasting smoke/soot/tar to poisonous dioxins/cyanides etc!)

 

Generally speaking, by the time any wood has burned down to the glowing coals stage much of the nasty stuff is gone....
