Oak coasters

I was laboring for a friend of mine who is a tree surgeon, it was back in October 2012 and he had to take down a beautiful Oak tree (insurance reasons). I worked for the wood as I had some ideas and one of them was to make some Oak coasters.

 

I am in need of some advice as to what type of oil/wax/varnish I should be using for them? I would like the finish to be as natural as possible, like these:

Of course there are the issues such as the wood drying out and cracking, or if people spill coffee/wine etc it needs to be protected from such strong staining liquids.

 

Here is one of the coasters, I have not sanded it down yet but just to give you an idea.
