What's for lunch?

Once. My wife and daughter made me lunch.
Tuna and cucumber sarnies, crisps, healthy seed bar, nuts, dried and fresh fruit and a yoghurt.
All in my wife's shiny new lunch box.
Loaded the van, put lunch box on roof, drove off.
30 miles later no lunch.
Doooooooooooohhhhhh!!!!

I tend to cook twice the amount of dinner required and tupperware it up for the next day.

salad, halloumi and marinated chicken with or without dressing

rice, sweetcorn, peas, chicken, sweet chilli sauce

pasta, tinned tuna, mayo, peas and sweetcorn

If i have sandwhiches i normally have ham (from costco) with either salad or cheese and pickle.

salad, boiled new potatos, boiled egg, tinned tuna, feta cheese bit of olive oil or some thousand island dressing and youre good to go.

 

when it starts to get colder I have a jetboil so i make soups to warm up with some crusty bread. cant beat it when you've been getting rained/snowed on all morning to have a hot lunch. you can also use it to reheat chilli, spag bol and curries, i highly reccomend them! just be careful as its easy to burn the food, make sure its fairly liquid based and stir it often.

That's a good idea pdizzle
I'm just going through a really lazy cooking stage, I cook 2 meals at a time, then eat the lot in one go.

steak and kidney pie from a pie shop of your choice..

 

i think the jet boil is a good idea as well, heat stuff up.. though i use a trangia myself..  then the other option..  have a good breakfast and skip lunch..

I used to carry a gas stove, kettle etc
But I have to leave my van at the depot now.
Pie shops are great, but my budget is quite limited, hence my curiosity about sarnie fillings.
Can't do breakfast until 8.30, work starts at 7.30

Yeah- Iv thought about taking a Trangia a few times but then can’t be arsed to wash up stuff when I get home.

in fairness- for the last year my wife has been making my lunches- but new job for her starting Monday, can see the lunches coming to an end.

 

How about just a few boiled eggs, a carrot, handful of nuts, cheese and crackers, yoghurt- maybe a Bakewell tart.

done this a few time but does feel quite as substantiating as sandwiches etc.
