I would say SS is better than Ali, probably costs more but as far as "pro's & con's" go I would say SS wins. As for size, what can I say except big is best :-)

Aluminium has a 5 times better heat transfer than steel and stainless steel is less than half as good transfer of mild steel for the same thickness, mind at these gas velocities it's the boundary effect that limits transfer more than the metal.

Biggest is best of course and they boil water so damn fast it doesn't matter.

Get the biggest you can, it'll always be only just big enough, I'd stick with the Ali too, cos that's what I have.

Bought a small stainless, I dont like the metallic taste of acidic High Weald waters cooked in Ali. Looked at the larger stainless model, but fire box was so large I think much of the heat from the fire in the centre would go straight up without touching the sides.

Its the old surface area to volume ratio again.

Like why smaller woodstoves are more efficient than larger.

I've got the small Ali one - it fits behind the landy seats OK and boils enough to do 2 cups worth. So far been OK for what I wanted
