Whats your bird?

Anyone else a keen cook out there? whats your plans for the xmas meal? you getting involved or leaving it to the wife/cook as some describe her?

 

Well this year fancied a change, goose instead of turkey. (although we are doing a turkey aswell) The Jamie Oliver show the other night must have inspired me. So the order went in to the old man went and came back with a Canadian goose. Butcher friend crowned it after we had prep'd it. Now it is in the oven and smelling pretty damn good!

 

Anyone else doing a bit this year and has anyone else roasted a Canadian before?

I always cook a goose for xmas loads nicer than turkey. Very rich meat. It also provides you with the best fat ever for roasting your taters. Best served medium rare too IMO.

Going to a local hostelry this year for a change, but currently making game pie for Boxing Day. Tbh I think half the Christmas thing is the aroma wafting about the house of the bird roasting in the oven, but I've been out-voted this year!!

Did you see that episode of River Cottage where Hugh Fearnley Whittingstall started with a Woodcock and stuffed it in a woodpigeon and so forth until the last bird if I remember rightly was a Guinea fowl? Now thats a feast.

this year we got beef and pork joints as a change from turkey or goose. daft really as my folks own a large poultry and waterfowl business run from our farm and we got a 1000 or so birds to choose from!!

Seems their are a few mean chainsaw men that are also a dab hand in the kitchen.

 

Spent this aft making my stuffing, Havin goose,so in went the liver,heart with minced pork, and some other goodies...just don't let the kids see,they think it's special paxo. Then on to me full leg of ham (cheap at £30),bone it out myself and give a decent size joint to the two groundies. still leaves plenty to see us to new year. cover in mustard and dark sugar,,just grab a slice as you pass. Just waiting for my last batch of mince pies to come out the oven.........Ahhh thats why I'm on here at 9pm xmas eve and am not billy no mates..all the best and may 2009 be agood one.

beef joint and a chicken here....i dont see what the big deal is about turkey, i think its a dry horrible meat personally

Triple roast, Goose chicken pheasant. First time trying this ,so finger's crossed but in theory sound's great!

Turkey crown here, done in the Arga it comes out succulent and moist, yum!!!
