Why wont the birds touch my nuts?

Maybe it's my age or I'm aiming too high but I want to attract a better class of bird. I have got my nuts out and have even tried with big fat balls but not even a nibble! I get plenty around showing their red breasts following me everywhere in the garden but I'm not satisfied. Can anyone recommend hedges or trees that may attract them to nest? :001_tt2:
