out of curiosity, how do you make wine out of birch?

 

Can't remember exact quantities of ingredients but pretty much it's a case of boiling up the sap, dissolving sugar into it, letting it cool, add some generic wine yeast and then sit it in a demijohn for a while. bottle it up once finished fermenting, wait a few weeks and enjoy :thumbup1:

 

I did 2 batches of 5 litres and made one with more sugar - ended up with one niceely sweet and the other medium(ish).

I got the London pride kit which turned out alright but I really want to do it from scratch. Just got to clear out the shed and make some space

Just started home brewing, mainly to save having to go to the shops all the time for beer.

I drink ale and my O/H drinks lager so we have 2 sets of everything. Did the first brew 4 weeks ago, and another today

The lager is Caxtons, seems to be shaping up nicely, will be leaving it another week or so before we start it.

For the ale I went for Woodfordes Wherry, first brew seemed a bit wishy washy on early tasting so I'm dry hopping this batch to try and get a hoppier flavour. Again will start drinking properly in about a week or so.

Will update this in a few weeks.

You want to use less water in the Wherry kit and add some extra malt - for some reason the instructions always come up thin (±2% abv).Try the link: this variation is good through to 4% abv; wherry at the pump is 3.8%.

Here is my homebrew that i filtered out for the first time in 5 years. Both bottles are Old Speckled Hen bottles but which one has the homebrew spirit in it.

Just started drinking my first batch of homebrew. Woodfordes wherry, been in the cask nearly 8 weeks. As above it could have a bit more body to it but all in all I'm quite happy with it.
