Birch wine

So who has tried it? I only heard about it a few weeks back and I'm well up for giving it ago.

 

Do I drink it straight from the stump or leave it for a month or so?

The syrup tastes nice tho but you need lots of sap to make it once cooked down.

grand tasteing wine half a demijon of sap top up with water handful of raisins about 2IB of sugar, a bit sweet but it tastes like maple syrup and gets you pissed

Don't know about birch wine but have just made some rhubarb wine and it tasted pretty good - although I suspect would leave you with a bad head if consumed in quantity. Appearance wise, the less links drawn to the word "sample", probably the better!

 

How do you go about collecting birch sap then?

One can use the same recipe for Sycamore and Walnut as with Birch (page 139). Needs to be tapped this week if possible and later in Scotland due to current weather. trees should be 8" diameter min to avoid harm.

how on earth do they come to THAT conclusion! 8" diameter! its invasive of course its harmfull!
