Get a slab of cedar or apple or simliar and cook straight on top of it. Mmmmmmmm

 

 

Hadnt thought of that- I was under the impression that you shouldnt use softwoods or sycamore? I take it you have tried cedar?

Do you put the wood in a box then the fish on that or straight on the coals or what mate?:001_smile:

 

thats a great idea tommer......i love my fish and we alot of it in this house......so how does it work? just a tin with sawdust and stick it on the hob?

 

Get a biscuit tin, pierce the lid, and put a good handful of whatever wood you use, plus some herbs- fairly strong ones such as rosemary etc are fine- in the bottom of the tin. Put a wire rack about halfway up, put your fish on that skin side down as applicable, and for a couple of steaks like above, its about 10 minutes over the flame on the hob.
