Can someone please shed the light on these saws and there differences? I'm looking at both of these and I'm unsure which one to go for!

560 runs a 325 chain and the 562 runs 3/8th. The 562 also has a different shape filter housing. Not sure what else is different but can't imagine its a lot. I'd stick with the 325 chain as I'd imagine it cuts faster

562 also has wider mounting hole spacing for the outer bucking dawg . I think this is to accommodate the larger dia 3/8th  powermate  and bar .  Mine is a bit of both ....

The 562 is a large bar mount hence the "wider" spacing for the clutch cover felling spike....It has more chip clearance due to this which is handy. On paper they ,560-562 , have the same specs but I own and run both  and am sure the 562 is a stronger runner. The 562 is listed to run a 24"  so stands to reason it's "chip" is a little stronger ? Also the larger air filter on the 562 must be accounted for on the 562's softwear. I have one stock 562 and two ported 562's, one 560 and one dead 560 !

The 562 actually has a max recommended bar length of 28"! [emoji15] that seems a bit large considering the 560 is 20"!

If you remember where the 562 is mostly sold (and has been for a long time)..... the 28 inch (supposed ! ) rating may make sense.
