That Stihl would be a beast. I had the same set up but on a 341. The .325 chain is awesome

I really dislike.325 in the woods. Too fragile & easy to stretch & too many cutters to sharpen.

I run a 441 cuttings 95% hardwoods, but if you wanted a smaller lighter saw I would run a 560.

Had nothing but bad luck with 560’s my current 550 is 12 months old and going well but 372/461 20” in the woods

18" Sugi pro light on 560 driven by an 8pin .

Stihl here. Depends what flavour of forestry. I am often just making safe windblow or dropping a few 'scarier' trees for a small woods owner. Whenever I can I'll just use my 261C-M, 18" sugi bar for added lightness and with standard .325 chain - but no, its not fast.  If speed counts I'll use the 441.

Got a 261c with an 18 on at the moment. Only by accident because that is all they had in the shop. I usually run a 16 on it but it got warped.
