Lots of interesting replies, makes choosing just one very difficult for the congenitally indecisive but if pinned down it would probably have to be lime.

Nice big 'clean' Aaks, with really broad crowns, and very little epicormic! Beech, nice to climb and no nastybits to snag on, shame they turn your hands green. And Birch for how easy they are to get down.
