wood for smoking meats, fish

Good day fellow members, Just curious with the many species of wood in the UK do any members provide commercially the likes of Cherry, Peach, Oak or Hickory to your customers or for yourself. I know of One company here Stateside that collects as much as possible for one of his customers that has a large smoke house.

I know of a local smokehouse that buys in various woods for smoking.

Whilest I don't supply any specific variety of wood to anyone,I did give a couple of wild geese to a Polish fella who smoked it over pear wood and gave some back to me.

Hello Ted,

 

I supply a friend with a small amount of oak wood chip who smokes (Norwegian) Salmon in his garden in an old converted freezer

Quite a lot of jerky sold now so would think there is a good market for all meats

We sell apple and plum chippings to a guy that smokes pork. It is amazing

We do ours over elm chips, both salmon and haddock

Best market is barbecue season in the uk for chips and there is only a few over here i know of who do them on a large scale
