I have Meindl Dovre Extreme for shooting, lovely boots, perfect in every way if bit restrictive for driving but it's doable.... I manage but my car's auto....

Meindl or altbergs are great ive used both over the last 10-12 yrs mostly in the military in alsorts of weather conditions, the altbergs bought from their site fit v.well and i dont think u really need to go to their store for fitting

Lowa mountain or combat boots, very very waterproof and Scotland proof. Very much loved by Army types as replacement for standard issue boot.

le chameau mouflon or mouflon plus, mouflon plus is a good high boot and i do everything you listed in them, fishing shooting watching rallies, beating and walking the dogs every day, combined with a good pair of gaiters they are really good, a bit pricey but i think you get what you pay for, where abouts in carms are you.

The le chameau boots are great!

 

One of my mates has a pair of damned boots from the states and reckons they're the best he's had! Not sure if they're available over here though!
