Sorry what is like the sapwood? There is no sap in the picture I posted if that's what you meant.

 

Sap wood is the lighter wood as apposed to the heart wood which is darker . Takes a long time of growth to get any large diameter heart wood .

You don't get much sapwood on imported walnut. It comes square edged and most of the sap is removed at the mill. Generally speaking sap is not used in furniture as it's to soft to stand up to every day use admittedly the sap on American walnut is better than some species. There is a small amount of sap on the underside of our worktops as you can see in the picture but don't think there is any showing in the pictures you posted.
