Enchiladas from Hell.

1.5lbs cooked and shredded chicken or beef

2tsp butter

1 large onion

2 cloves crushed garlic

4oz diced jalapenos

1/2tsp chilli powder

1/2tsp oregano

4 tbsp Hot Sauce from Hell

4 cups enchilada sauce

2 cups grated cheddar cheese

12 Tortillas

Saute onions and garlic in butter until soft, a chicken or beef and mix well. Blend together the green chillies, chilli powder, oregano, 1/2cup enchilada sauce, Hot Sauce from Hell and salt to taste, blend with meat and set aside. Grease a large pan, and place each tortilla in a bowl of enchilada sauce and coat well: then lay in pan. Place 2-4 tbsp meat mixture in each tortilla and 2tbsp of cheese, roll and place seam down. When finished, cover with remaining enchilada sauce, sprinkle with Hot Sauce from Hell and top with cheese. Bake in oven at about 180degC for 35mins til hot and bubbly.

Oh and dont forget to place the toilet roll in the freezer for best results.

I can vouch for this recipe, AWESOME heat.
