Looks pretty good.

 

One thing I have found to stop mold, put the logs in part seasoned/ dry from rain water makes a huge difference. My layout is different as in I don't have the middle pallets just pallets up against the sides and have a walkway through the middle. May get mold problems close to the middle but you wont know until you try.

Time will tell on this one. I would defo cut a pallet down for the Middle and loose the ply wood as that is the most likely bit for mould. Now they are stacked in there you may as well keep going. If you find after a week the bags are bleaching you could sneak something over the stack like hessian sack to keep the sun off but still allow breathing.
