Hi bobh, you might be better of trying to spend a bit more tbh, the mora 106 is a better carving knife, its slimer and slightly longer than the 120, as for spoon knives have a look on ben orford website his spoon knives are very good. the 163 is double sided so it is no good for when you want to push the knife with your fingers, your better with one sided spoon knives.

best advice is to not carve your hands lol:lol:

seriously, i'd recommend flexicut. they are great bits of kit. if you can stretch to get a flexicut carving jack its the swiss army knife of carving :001_smile:

I would also recommend the 106 over the 120, and agree that the ben Orford spoon knives are good. If you buy the mora spoon blades you will soon want to upgrade.

If you do not mind putting a handle on then Nic Westermans blades are excellent

Thanks for all the replies on this.

I left my reply for a few days till I could let you know what we got and what we thought of it.

As I said above, money was always a consideration but we also wanted to get something decent, so ended up getting a Ben Orford spoon knife and all I can say is wow. The build quality is excellent and it handles and cuts wonderfully.

So far that's it but I think we will also be adding a flexcut or the mora 106.

Thanks again
