Cordyline smell?

Just taken down the rather large dead stem of my dad's cordyline

 

There are some new shoots in the soil surrounding the stem that are now at about 6", but as I was cutting up the stem in chogs it didn't half stink of vinegar.

 

Why?

Ha ha i had a giant one in my front garden, seven stems, up until 2 weeks ago, it had died of from the top, but new growth coming from the base so i decided to give it the chop !!!!

Cant say i could smell sick or vinegar, but that stuff got everywhere !!! wood normally gets in your boxers an stuff, but this got everywhere, an it was sharp an prickly as well.....
