Day rates: why so cagey?

Typical conversation between me and a new client (when climbing)

client: how much? That’s too expensive!

me: have me in for the day, if you’re not happy with my rate at the end of the day then pay me what you think I’m worth, we’ll shake hands and I’ll go on my way with no hard feelings.

I like it! I am definitely too soft.  Last time I had that convo, I said sold myself short 😅

Feel free to steal that 😀

I have had to reduce my rate because people have told me that it's steep.  I think they may have been manipulating me though due to my naivety. Others have accepted without question. I have found these conversations very difficult.  I feel what I expect is reasonable based on my skill level/set and overheads.  I need the work at the moment, so I don't feel I'm in the driving seat

You are not in the driving seat as you say, you an employee/subcontractor.

Not sure how long you have been subcontracting yourself out but knowing your own value/worth is one of the most important factors to setting your daily rate. I would suggest allowing others to set your rate if you have plenty of experience is the wrong thing to do.
