Cheers guys unfortunately I don't have access to willow. I do have a pile of mixed logs which I was going to use, does the type of wood matter?

 

Not really but the wait for the 'flame' to die back may be longer. Mixed wood chunks in the Pizza Oven are much easier to move around (when cooking) than logs and the flame dies back very quickly.

Some pictures of one I did last night:

 

This is twigs freshly cut from a mulberry in the garden that's due for the chop.

After about 30 minutes the flaming off of pyrolysis gases and vapours coming out of the can through the ash

Cooled down by morning

Finished product, you will note slight greying of some tips where some oxygen must have found its way past the loose ash into the can before it cooled as the gases in the void contracted.
