Reviving an olive tree

Do they? Most of the best examples are solitary 'standards'. It will only take 100 years or so to achieve the look you want.

I wish I'd taken some photos, but yes that is definitely what they do in Andalucia and Mallorca and elsewhere for all I know.

Hmmm... seems like I should maybe start adopting a healthier lifestyle. They say olive oil is good for you, don't they?...

These that have been stuffed into 200ltr pots seem quite happy, if they can be hacked like this and put into pots they must as gooseflight says be quite resilient.

Just baby sitting these at the moment .

I think olives can take a very hard cut; so, remove the dead and keep the new growth. Mulch around it, feed it (bonemeal should be good enough) and water it. They like sun so make sure it gets enough and isn't exposed to harsh winter wind (generally north-easterly I think)

Here's some pics from my current holiday on paxos, near corfu. Some really tough rejuvenation works going on at the moment. Their olive groves have been out of production for maybe a generation but are now being looked at again as a cash crop. Most of these trees seem to be coping with this treatment .I was out here last year when the island wide works were just starting. Looks aggressively savage, especially considering this wasn't done in the cooler months. As long as one or two twigs were left the poor trees seem to have responded.
