Best way to mill Beech?

I've got three large beech butts to mill all around 2foot diameter. But was wandering which is the best way to mill them?

Would quarter sawn be to much effort for such small boards and would it be worthwhile?

or should i just go for through and through planks? but they may bow etc with drying.

I am thinking of milling one of them into 5inch square posts as well for a bench i intend on making with them.

Any ideas would be most helpful!
