Will Malloff in Chainsaw lumber making shows how to make endgrain-type boards (ellipses). It's at the end of the article under "speciality mills". Things like house signs etc are made this way.

You put the log at 45 deg and mill horizontal. This reduces cracking in the ends of the log as there's still cross grain holding together. A good dose of PVA to reduce drying speed would help, or instant kilning. Worth a try with a small log to see if you can make the order up this way perhaps...

I forgot about reading that, Will havebto try it one day.

I always oil my boards with tung oil as its foodsafe and reasonably water resistant. This takes around 7 or 8 coats. On a commercial level you May want to give just one coat of a good polyurethane varnish although I prefer the finish of oil.

Hi Rustins Danish oil is excellent, it states on the can that it is food safe 24hours after application. I use it all the time and it also takes a wood wax when dry albeit not on chopping boards of course.
