dont think that it would be a problem, however in my opinion it would be too soft and could get a bit carved up fairly quickly. can you not use a bit of maple or beech?

I thought that sycamore was the traditional wood for all kitchen tools like spoons, spatulas, salad servers etc. and that normally only hard woods were oiled. Just depends on the colour and durability you're after. Sycamore remains light in colour while most oiled timber gets progressively darker. It might get tedious to have to re-oil the bread board each time its washed.

think you`ll find beech is now mainly used for most kitchen items,,,and they sure as hell dont oil them once you`ve bought them,,,,,,an after care label helps obviously,,,,our cedar one at home here is still going strong after no oiling,,,,,,
