On a recent trip to Agrigento, a UNESCO World Heritage site, I picked up a cone and let it dry out and the seeds came out. What would you guys recommend as a way forward to get them to grow and plant out?

Been there. Definitely stratify. Ive brought seeds back from abroad and had very poor results.

Put in a gritty compost. Bottom of fridge in an old takeaway plastic container or similar. Keep moist. Sow next spring. A bit late to stratify and sow this year.

Have you ID'd the cone?

As Goaty says will probably need a chill. Sow some now just to see what happens.

Stick the rest in the fridge and sow next spring or sow in autumn and leave outside. Be sure to protect from mice.

I'd say it was a generic Mediterranean Cypress - some may call it a Macrocarpa. Not to sure whether to give it the cold/hot/cold/plant treatment in damp compost and vermiculite or just the one cycle. Might try a few things as their are plenty to play with.

I'd also be tempted to bung a few in a pot of compost and see how they get on (thinking thst perhaps the cone has been through winter now and the seeds will be ready to grow)
