Jensen blades

Can anyone explain why the blades in a Jensen 530T are double bevelled. I don't know about other Jensen machines but mine are and I can't really see why. I thought it might be a strength thing at first but then if you just carried on following the first angle, the blade would be just as thick. Then I thought it might be to do with directing the chip the right way once it leaves the point of the blade but I can't believe it makes a huge difference.

But if it is vital, then obviously it must carry on that way. But it basically means two grinds per blade and therefore twice the cost.

Hopefully someone can say for definite so thanks in advance.

hi,its vital to keep the 2faces ground, if you dont then the cutting edge just gets wider the more you grind a new edge on , thus the bigger the cutting edge the more horsepower the engine uses. knife cutting edge is only about 5mm. maximun knife wear limit is 60mm/80mm.we pay about thirty quid a pair for grinding if we take 3 sets in at once.
