I have about 40 tonne of birch which we cut this summer and has been stacked outside since August, it is between 3 - 10 inch diameter stuff.Will I be able to log and sell this now with it being birch, and will it burn ok on log burners without complaints !

Buy a moisture meter and you will be able to answer this question yourself

Birch can be very slow to dry in the larger diameters because the bark is not very breathable.

Logs should have been split lengthwise or the bark slashed.

Dont leave outside more than a year as it will rot.
