Fungi Recipes for Arbs.

Butter-boiled Beefsteak

 

(Extract from rogersmushrooms.com)

 

Rogers Mushrooms | Mushroom Pictures & Mushroom Reference

 

450 g (1 lb) beefsteak fungus

6 shallots

4 cloves garlic

ThymePepper and salt

 

Clean and cut the beefsteak fungus into fine slices and place in a frying pan with finely chopped shallots and garlic. Barely cover with water and simmer for 10 minutes. Add pepper, salt, thyme and a generous knob of butter and cook until the liquid has reduced to a thick sauce.
